Oh, how we LOVE Schlitterbahn! We love the water, the rides, the food, the Comal River that flows through it! As a mom, I love that I can take our lunch, and sometimes breakfast and dinner, in an ice chest to the park! Schlitterbahn knows that moms appreciate it, and have a fun activity for us this year, the Schlitterbahn’s Moms Ice Chest Challenge!
We literally eat out of our ice chest all summer. A couple of year’s ago, my husband grew so tired of me buying ice every day, and never having ice for his sweet tea, that he came home with a commercial ice maker!
I have several favorite recipes for the ice chest, but one of my favorites comes straight out of my garden, GAZPACHO!
Gazpacho is a cold tomato soup, and perfect for those hot days at the waterpark! I store in individual round Ziplock containers with lids, so the kids can grab it for a quick and healthy snack.
RECIPE
3 large tomatoes, seeded, peeled and chopped
1 large cucumber, peeled and chopped
1 large bell pepper or 2 banana peppers, seeded and chopped
1 very small red onion, finely chopped
1 jalapeno, seeded and finely chopped (optional)
1 garlic clove, finely chopped
juice of 1 lemon (because I have a lemon tree, but lime works just as well)
a few leaves of fresh basil and lemon thyme, finely chopped
1/4 cup Extra Virgin Olive Oil
3 teaspoons apple cider vinegar
salt and pepper to taste
This is the super easy part. Put everything in a blender, and pulse until it’s incorporated.
(Now, this is my basic recipe. But if I have something else growing, it might go in there, too. Because I love squash and zucchini, I sometimes will throw a small one in with it all. Watermelon adds a really sweet taste, too. Have fun!)
I store in individual round Ziplock containers with lids, so the kids can grab it for a quick and healthy snack. Just don’t forget to pack the spoons. You can make it in the morning, or the night before you plan to eat it. A few hours in a cold ice chest will have it nice and chilled!
